The Teodora cake, created in 2002, got its name from the empress of Byzantium, wife of Justinian the Great, portrayed in the mosaics of the Church of San Vitale’s apse in Ravenna.
The recipe of this cake was created by a group of local confectioners who later founded the Association Gruppo Pasticceri Artigiani di Ravenna (Group of artisan confectioners in Ravenna), officially recognised by Confcommercio.
Its ingredients are for the most part traditional local products, such as pine nuts and cornmeal, but also butter, icing sugar, eggs, yolks, wheat flour, baking powder, chopped almonds and cinnamon, given the connections between Ravenna and the East.
