The Spoja lorda or Sfoia lorda (minestra imbottita or mnëstra imbutida) is a traditional pasta of Romagna, square shaped, whose filling is made of ricotta cheese (or Raveggiolo), eggs, Parmesan cheese and salt (Recipe).
It is said lorda (dirty) as the filling used in their preparation is not much, just enough to smear the dough. It is usually used the surplus of Cappelletti filling.
The local tradition is to use padded soup in beef broth, served hot in the classic bowl, with the addition of grated Parmesan.
