Caterine are traditional specialties from Ravenna. They are chocolate-coated biscuits shaped like dolls, hens or roosters and topped with colourful sugar decorations (Recipe).
Their origin is unknown, however every year on Saint Catherine’s day (25th November) these doll- or chicken-shaped sweets are baked and given to children.
The hen is a symbol of fertility for girls, whereas the doll represents their patron Saint Catherine and the rooster symbolises the break of day, therefore return and renewal.
